INGREDIENTS
Potatoes - 3 medium - peeled and cut into 1-2 cm cubes
Frozen mixed vegetables (carrots, green peas, corn, french beans) - 2 cups - defrosted
(or fresh vegetables can be used, but it defies the idea of quick food!!)
Onion - 2 nos - chopped into square pieces
Garlic - 1-2 cloves sliced into circles
Green chilli - 2 nos - sliced
Sunflower oil - 2-3 tbsp
Chilli flakes - 2 tsp
Garam masala - 1-2 tsp
Mustard seeds - 1 tsp
Salt and pepper - to taste
METHOD
Heat the oil in the pan/wok.
Add the mustard seeds and allow it to pop. Then add the onion, green chilli, garlic and salt.
Fry these until the onion is translucent.
Then add the garam masala and chilli flakes.
Add the potatoes and mix well.
Then add the mixed vegetables and cover the lid and cook until the potato is soft and the carrotscan be cut with the spoon.
READY!!... serve as a side dish to basmati rice/chappathi
